1 cup ricotta cheese
4 eggs, lightly beaten
2/3 cup flour
1/4 tsp. salt
oil for frying
cinnamon and sugar
1) Mix eggs and cheese until smooth. Blend in flour and salt. Stir while whistling something annoying.
2) Pour oil on a griddle or frying pan. Fry the mix by tablespoonfuls over medium heat. Turn when the first side starts to bubble, then fry until brown. If a smoke alarm goes off, your house may be on fire, or even worse, you may have burned the latkes.
3) Drain on paper towels. Sprinkle with cinnamon and sugar. Serve with applesauce (optional).
4) Shove latkes into your mouth obnoxiously (not optional).
